Peggy Hollon's Rice Salad

  • Cook approximately 3/4 cup rice in 2 cups of water, with 1/2 tsp. salt. Simmer 25 minutes covered.
  • Let rice cool.
  • Add:
    • Small can Mandarin oranges (drained)
    • Small can crushed pineapple (drained)
    • A few marachino cherries.

    May substitute other fruits or pre-mixed items such as fruit cocktail (drained).

  • Stir in cool-whip.
  • Best if mixed ahead of time and allowed to set awhile (refrigerated) before serving.
