Louise Johnson's Devil's Food Cake

  • Cream:
    • 1/2 cup butter (Original recipe was lard, but Crisco is OK)
    • 2 cups sugar
  • Add:
    • 3 eggs and beat
    • 1/2 cup lukewarm coffee
    • 2 cups flour
    • 1 tsp. soda
    • 1/2 tsp. salt
    • 1/2 cup cocoa
  • Mix well.
  • Add:
    • 1 tsp. vanilla
    • 1 cup boiling water.
  • Mix well
  • Put in a greased cake pan and bake at 350 degrees for 40 to 45 minutes. Check at 25 to 30 minutes - your cooking time may vary.

If you don't happen to have left over coffee, use lukewarm water for the 1/2 cup measure and 1 cup boiling coffee instead of the boiling water.

I greatly prefer this topped with the Broiled Praline Icing.
