Peggy Hollon's Rice Salad [1]

- Cook approximately 3/4 cup rice in 2 cups of water, with 1/2 tsp. salt. Simmer 25 minutes covered.
- Let rice cool.
- Add:
- Small can Mandarin oranges (drained)
- Small can crushed pineapple (drained)
- A few marachino cherries.
May substitute other fruits or pre-mixed items such as fruit cocktail (drained).
- Stir in cool-whip.
- Best if mixed ahead of time and allowed to set awhile (refrigerated) before serving.
